Whipped Tofu Cream

INGREDIENTS

  • 8-ounce container soft tofu, drained
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon rind
  • 1 teaspoon lemon juice

INSTRUCTIONS

  1. Place all ingredients in blender, and whip for 5 minutes.
  2. Stir four or five times, and then whip again for 5 minutes until creamy. Serves 4 to 6.
